Pierre Paillard 'Les Parcelles' Bouzy Grand Cru Extra Brut is a Sparkling - Complex and Traditional style of Champagne produced by Champagne Pierre Paillard in the Champagne region of France.
Paillard is what’s known as a “Grower Champagne” which means Champagne produced by the same estate that owns the vineyards from which the grapes come. While large Champagne houses, such Veuve Clicquot, or Mumm, may use grapes sourced from as many as 80 different vineyards, Grower Champagnes tend to be more terroir focused, being sourced from single or closely located vineyards around a village.
Paillard has 28 acres exclusively in the Montagne de Reims grand cru top village of Bouzy. Their estate is planted to Pinot Noir and Chardonnay.
Tasting notes: Racy, with a tightly knit palate of apricot, chalk, lemon zest and biscuit flavors, featuring a vivacious, lacy mousse. Well-balanced, with a clean-cut, minerally finish. This wine is labeled extra brut and only 1.8g/L dosage yet several critics comment that it comes off almost sweet due to its richness and the ripeness at which the grapes were picked. I prefer to say that the acidity is well balanced and the wine is rich and full. This wine is composed of 70% Pinot Noir and 30% Chardonnay with about 1/3 reserve wines. This wine has such power and presence it deserves a great pairing like lobster, but also has the elegance to enjoy as an aperitif.
Why I'm featuring this champagne: At a recent blind bubbles tasting I hosted this particular champagne was a stand out favorite above Veuve Clicquot (attendees' self-proclaimed favorite)! At the same price as Veuve this is a much better wine! I think you'll enjoy! It was my first grab in trying to mitigate against the upcoming champagne shortage and I'm sad to say I could only get a single case allocation and the CA distributor no longer carries them! So once this case is gone, it's gone.
